As you know, Rhubarb is very sour vegetables when consume as is, and it is suitable for jam and sauce.
The recipe I followed used Blueberries putting together with diced Rhubarb.This way the filling became milder in sourness, it actually adds nice and pleasant sweetness.  The recipe also used sour cream for the crust, taking over the role of which the eggs and water play.  This has produced a good shortcrust flavor and texture. I baked this twice this summer eventually, and particularly this second bake is made my favorite (in photos below). I am satisfied both with the fillings and the crust which finished better than my first bake.  Rhubarb and Blueberry fillings was made nice ruby sauce and it flowed when you sliced.
It was hard to control my craving to it serving with a scoop of vanilla ice cream, but my friends couple enjoyed with the scoops! 😋

ずいぶん昔、アンナミラーズというパイ専門のカフェに入った時に初めて知った、ルバーブ・パイ。
甘酸っぱい素朴な味がアップルパイと並んで大好きになったけれど、意外にもその後目にする機会はなく。。。
こちらシドニーでも、ルバーブ・パイをお店で目にする事もないし、とりわけルバーブ・パイが好きという人に出逢いませんでした。
でもスーパーでは普通にルバーブが野菜コーナーに並んでいるし、これはいっちょパイを焼いてみようと相成りまして。。
結果、今年の夏は2度ルバーブ・パイを焼きましたが、2度目は特にパイ生地がサクサクにできて大満足。

参考にしたレシピでは、ルバーブにブルーベリーを混ぜて自然な甘みを引き出すのと、パイ生地を卵と水の代わりにサワークリームをバターと小麦粉に混ぜるという内容で、珍しいと思ったのと美味しそうだったのでそれに沿って製作。

焼きあがったパイが覚めるのを待ってからナイフを入れると、ルビー色のソースが艶やかに広がる。

酸味強すぎない控え目な甘さ。
今回体重を気にして、私はナントカ理性で堪えましたが、実際はバニラアイスクリームなどと食べると更に美味しそう。

仲間であっという間にペロリと平らげました。😋

    I like each of those on their own, but I’ve never tried them together. Our rhubarb get mixed with strawberries. Or, on its own with lots of sugar.

    . . . and of course you need icecream on it . . . it’s almost a law.

      Thank you Emilio, it seems like ice cream isn’t a second to support the pie!
      I will make sure next time to have ice cream ready to go with.😊
      Also, i will bake with Rhubarb and strawberries next time, it must produce a bit different flavor 🙂
